You don't need to cook that long., July 11, 2008

"I've been making farro since we visited Tuscany. It's wonderful. You can get it at Whole Foods, I can't find it anywhere else.
BUT, after you soak it for 8 hours it cooks in 30 minutes, no problem. I do salt the water. And I add the olive oil while it's still warm. It's great with Italian marinated veggies in the jar. This is somewhat like we had it in Italy, but without "the jar" veggies."
