Poached Pear Recipe,

"This is a very good recipe. However, do not use ground cinnamon, as the recipe recommends. Ground cinnamon gives the sauce a very gritty, unpleasant taste. Use a stick of cinnamon instead to get a nice smooth sauce and discard the stick at the end. Be careful not to overcook the sauce after you remove the pears or the sauce will become sticky (viscous) instead of thick and runny. I used only two pears in a small sauce pan and therefore only needed 1/3 of the other ingredients - 1/2 cup wine, 1/4 sugar,etc. It was really very good!"
